About the Event
In this virtual food demo with guest speaker Denee Bex, MPH, RD, CDCES, we will explore the rich culinary heritage of the Navajo Nation. Blue corn is a variety of Native corn used in traditional Navajo dishes, however the recipe featured in the food demo will put on a unique twist to this special ingredient. Blue corn, a staple historically used by the Navajo people, will be incorporated into banana-walnut pancakes to increase the nutrient content. We will discuss the nutrient profile of this unique ingredient and discuss how Native food sovereignty is key to creating healthier Native communities.
